Sugar Free Blueberry Coffee Cake



This is the perfect sugar free cake to make early in the morning before you head over to work. It is easy to make and perfect to bring along with you on your morning commute.

Ingredients

• ¾ cup of butter
• 1 cup of milk
• 3 eggs, beaten
• 1 tsp. of pure vanilla
• 1 ½ cups of sweetener
• 2 tsp. of baker’s style baking powder
• 3 cups of white flour
• 1 ¾ cup of fresh blueberries
• 1 ½ cups of brown sugar substitute
• ¾ cup of white flour
• 2 tsp. of powdered cinnamon
• ½ cup of butter, soft

Directions

1. Preheat the oven to 350 degrees. Grease a baking dish and dust with a touch of white flour.

2. In a bowl, add in the melted butter, milk, beaten eggs, pure vanilla and sweetener. Beat well with a mixer until mixed.

3. Add in the white flour and baking powder. Beat well until just mixed.

4. Add in the blueberries. Fold gently to incorporate.

5. Pour into the baking dish.

6. In a bowl, add in the brown sugar substitute, ¾ cup of the white flour and powdered cinnamon. Add in the butter and stir well until crumbly in consistency. Sprinkle over the top of the batter.

7. Place into the oven to bake for 35 to 40 minutes or until baked through.

8. Remove and cool for 10 minutes before serving.

• 1, 8 ounce container of whipped topping
• 1 cup of pecans, chopped

Directions

1. in a bowl, add in the sugar free vanilla pudding mix and cold milk. Whisk well until mixed.

2. Add in the crushed pineapple, whipped topping and chopped pecans. Fold gently until incorporated.

3. Pour the mix into the pie crust.

4. Cover and place into the fridge to chill for 2 hours.

Directions

• 2 cups of white flour

• 1 ½ cups of unsweetened applesauce
• 2 eggs, beaten
• ¾ cup of light brown sugar substitute
• 1 tsp. of pure vanilla
• ½ cup of raisins

Directions

1. Preheat the oven to 350 degrees. Grease a loaf pan with cooking spray.

2. In a bowl, add in the white flour, powdered cinnamon, powdered nutmeg, dash of salt, baking powder and soda. Stir well to mix and set this mix aside.

• ½ cup of graham crackers, crushed
• 2 Tbsp. of butter
• 1 pack of gelatin, unflavored
• ¾ cup of no fat milk
• 2, 8 ounce packs of low fat cream cheese
• 1, 8 ounce pack of no fat cream cheese, soft
• 1, 8 ounce container of sour cream
• 1/3 cup of white sugar
• 2 tsp. of pure vanilla
• 4 ounces of semisweet chocolate, melted
• Chocolate curls, for topping and optional

Directions

1. In a bowl, add in the crushed graham crackers and melted butter. Stir well until moist. Press this mix into the bottom of a springform pan. Cover and set into the fridge to chill.
2. In a saucepan, add in the gelatin and no fat milk. Set aside to rest for 5 minutes.
3. Set over low heat and cook for 1 minute or until the gelatin dissolves completely. Remove from heat and set aside to cool for 15 minutes.

4. In a bowl, add in the low fat cream cheese and no fat cream cheese. Beat with a mixer until smooth in consistency. Add in the sour cream, white sugar and pure vanilla. Add in the gelatin mix and beat well until mixed.

5. Divide the mix in half. Add in the melted chocolate into half of the mix. Stir well until incorporated.

6. Spoon half of the chocolate mix into the crust. Spoon half of the white mix over the chocolate mix in the crust. Swirl around with a knife. Repeat these layers once more. Swirl again. Cover and set into the fridge to chill for 6 hours.

7. Garnish the cheesecake with chocolate curls. Slice into wedges and serve.
